Ever have one of those days where you just need to bake something ooey and gooey to give yourself a quick pick-me-up? It's raining, I'm tired, way more stressed than anyone should have to be during the summer, and just feeling blah in general today.
So, while the Rev was out at a meeting tonight, I decided to bake some cookies. This cookie dough recipe is so easy and you really can add whatever you want to the base. A good all purpose cookie dough and I almost always have the ingredients on hand.
It's still raining, I'm still tired and stressed, but at least my belly is happy....
Whatever You Want Cookies
1 stick unsalted butter, softened
1/4 cup white granulated sugar
3/4 cup packed light brown sugar
1 egg
1 1/2 teaspoons vanilla extract
1 1/4 cups all purpose flour
3/8 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 1/4 cups whatever you want (I used half chocolate chunks and half M&M's)
Preheat oven to 350 degrees.
In a large mixing bowl, cream the first five ingredients with a hand mixer.
In a small bowl, mix together the next 4 ingredients.
Slowly beat the dry ingredients into the wet.
Stir in whatever you want.
Scoop dough onto an ungreased cookie sheet.
Leave about 2 inches between cookies.
Bake for about 9 minutes, give or take, and depending on the size of your cookie and how soft you like them.
Let cool for a few minutes before removing to a cooling rack or wax paper. Enjoy!
