Peanut Butter & Cocoa Granola

I had a chance to try this granola recipe from Sunday Baker last week while I was on Spring Break and it is yummy! Add a little yogurt and fresh fruit and you have a perfect breakfast or snack.

Peanut Butter & Cocoa Granola

Dry:

2 c. quick cooking oats
1/2 c. raw almonds, chopped fine (I used pecans)
2 t. cinnamon
2 T. baking cocoa

Wet:

5 T. all natural peanut butter (crunchy or creamy)
3 T. pure honey
1 t. pure vanilla extract

Mix all of the dry ingredients together in a medium bowl; set aside.

Stir all wet ingredients together, then microwave for about 45 seconds until the mixture is foamy/bubbly and melted.

Add the 2 mixtures together until well combined.

Preheat the oven to 350 degrees. Line a sheet with parchment and pour the mixture evenly on the sheet. Bake for 10-15 minutes, or until the granola is somewhat crunchy and crisp. Don't overbake. Stir half-way through baking.

Store in an airtight container.

Though this looks good.... it can't beat the taste of my Lemon and Almond Cake... Quick, have a taste. I am holding a slice up to the screen as I type!! ;)

I've never tried making my own granola... I think this might be one recipe I can actually try. Semi-OK for Jill, right? lol!!
