Remember in that movie Doc Hollywood when that sick guy pays the doctor with a pig? Well, around here in the summer, we get paid in vegetables...not really, but we have a lot of gardening friends and church members who are always kind enough to share their bounty. Last week, a sweet church family brought us a bunch of red potatoes, 1/2 a dozen ears of corn on the cob, and 3 zucchini. The next day, a good friend brought me 8 more zucchini. The Rev will help me polish off the corn and potatoes easy--he's a carb/starch boy...but I knew that I was on my own with the zucchini.
One night while he was out, I had corn on the cob and this Easy Zucchini Parmesan for dinner--it was so good, took all of 10 minutes to make and only has 50 calories for a whole serving.
Then over the weekend, I made these Frosted Zucchini Brownies for a semi-healthy treat. I love zucchini brownies and bread!
I still had plenty of zucchini left, even after sharing some, so I used this article to walk through freezing it, so that I can make more brownies or bread later. Summer all year long!

I'm not a zuchinni fan, unless it's breaded and deep-fried. lol My mom hides it in breads and cakes that I can handle, but otherwise, I don't envy your zuchinni overload! ;)

I'm with the REv on this one-- sticking with the taters and cobs. You might be able to fool me with some brownies, but just leave the Z word out :) hah!
