DCB Recipe #26: Greek Chicken Flatbreads

A perfect light summer meal! Thanks to Katie for the flatbread inspiration!
Greek Chicken Flatbreads

Chicken breasts 
Sun Dried Tomato dressing
Shredded Lettuce
Flatbreads (look in the bakery section of the grocery store)
Feta Cheese
Other desired toppings such as cucumbers, chopped tomatoes, olives, etc.

Marinate chicken in dressing for 2-24 hours. Remove from dressing, discard dressing and place chicken in the Deep Covered Baker.

Cook chicken in the microwave, covered for 8-10 minutes, or until fully cooked. Remove from microwave and shred/chop.

Place 1 tablespoon of hummus on each flatbread and spread. Top with shredded lettuce, chicken, cheese, and any other desired toppings.

That sounds so fresh and summery! Flatbread meals were really popular in Florida, but when you walk into the store here and ask for flatbread, people look at you like you just asked them where the teleporter to Mars is.
