A perfect light summer meal! Thanks to Katie for the flatbread inspiration!
Sun Dried Tomato dressing
Flatbreads (look in the bakery section of the grocery store)
Other desired toppings such as cucumbers, chopped tomatoes, olives, etc.
Marinate chicken in dressing for 2-24 hours. Remove from dressing, discard dressing and place chicken in the Deep Covered Baker.
Cook chicken in the microwave, covered for 8-10 minutes, or until fully cooked. Remove from microwave and shred/chop.
Place 1 tablespoon of hummus on each flatbread and spread. Top with shredded lettuce, chicken, cheese, and any other desired toppings.
