DCB Recipe #20: Rolled Up Chicken

This one was tasty and even includes your veggies rolled right up in the chicken, so its a one dish dinner. Make sure you pound your chicken breasts very thin or they will take a long time to cook...trust me!

Rolled Up Chicken

4-5 Boneless Skinless Chicken Breasts, pounded to an even thinness
1 1/2 cups Prepared Mashed Potatoes, on the thick side, helps if they are chilled
2 cups Steamed Broccoli, chopped into very small pieces, almost minced
1/2 cup Shredded Cheddar cheese
1/2 cup Flour
1/4 tsp Salt
1/4 tsp Pepper
1 Beaten Egg
1 1/2 C Bread Crumbs
1 Packet Ranch Dressing Seasoning Mix

Preheat oven to 350 degrees.

Place pounded chicken breasts onto a large baking sheet. Spread a thin layer of mashed potatoes over each chicken breast then layer with broccoli and cheddar cheese. Carefully roll each chicken breast up.

Place flour, salt and pepper into a shallow bowl. Place beaten egg in a second bowl and the bread crumbs and ranch mix into a third shallow bowl.

Dip/roll rolled chicken carefully into flour, then egg, then bread crumb mixture.

Place chicken rolls seam side down into the Deep Dish Covered Baker and cook for 35 minutes.
