DCB Recipe #16: Michigan Baked Oatmeal

I'm not the best breakfast eater, I'll admit, but I'm trying to get better. This recipe was easy to throw together and was delicious, not overly sweet and a great crunch from the nuts. I cut the recipe in half, since the Rev isn't much of an oatmeal man.

Michigan Baked Oatmeal

2 c. old fashioned oatmeal
4 c. milk
½ tsp. cinnamon
¼ c. brown sugar
½ c. walnuts, chopped
½ c. dried cherries (I used Cherry Craisins)
½ c. chopped almonds
1 large apple, unpeeled and grated

Preheat oven to 400 degrees.
Coat Deep Covered Baker or 3 qt. casserole with cooking spray.
Mix all ingredients in Baker and bake, covered for 45 minutes OR cook on high in microwave, covered for 15-20 minutes. Serves 6-8.
