DCB Recipe #11: Family Burrito Bake
YUM! Mexican food!
Family Burrito Bake
1 medium onion, chopped
1 lb lean ground beef
2 tbsp Pampered Chef Southwestern seasoning or 2 tbsp taco seasoning mix
2 garlic cloves, chopped
1 11oz. can corn, drained
1 12oz. jar chunky salsa
1 can refried beans
3 tbsp water
7 6 in. corn tortillas
2 cups shredded colby and monterey jack cheese, divided
Combine ground beef, onion, garlic and seasoning mix in deep covered baker. Microwave, covered, on high for 6-8 minutes or until beef is fully cooked, breaking into crumbles halfway through.
Drain beef and combine with corn and 1 cup of salsa in a small bowl. In a separate bowl, mix refried beans and water to thin slightly.
To assemble, place two tortillas in bottom of deep covered baker (if you don't have one, use small covered casserole dish or dutch oven). Cut one tortilla to cover any gaps. Spread one-third of beans evenly over tortillas. Cover with one-third of the beef mixture, and then one-third of the cheese. Repeat layers one time. Arrange remaining tortillas over cheese. Top with remaining beans and beef.
Microwave, covered, on high for 12-15 minutes or until center is hot (can be cooked in a preheated oven at 350 degrees for 50-55 minutes). Top with salsa and remaining cheese. Re-cover, let stand for 10 minutes.
