I am obsessed with grape salad lately. Ever since the warm weather hit (Jiminy Christmas, it is in the 90's here this week--its only June 2nd, people!), I cannot seem to get enough of this stuff. I found the recipe over at Lick the Bowl Good (WARNING: She has so many great recipes over there, don't blame me if you get sucked in!)
It is a great summer side dish, sweet snack, breakfast treat, you could pretty much eat it all day! And it is perfect for summer potlucks, since there is no cooking involved and you make it ahead. Try it, you will love it! And if you are trying to get buff for bikini season, make it with fat free sour cream and reduced fat cream cheese, and reduce your guilt!
Sweet Grape Salad
2 lbs. red seedless grapes
1 8-ounce package cream cheese, softened
1 8-ounce carton sour cream
1/2 cup white sugar
1 teaspoon vanilla
2 tablespoons brown sugar
2 tablespoons pecans
Combine cream cheese, sour cream, white sugar and vanilla in a large bowl. Gently fold in grapes.
Sprinkle with brown sugar, then pecan pieces.
Cover and refrigerate overnight or until well chilled. Serve very cold.
