In a Jam...

Its the week-before-vacation-week around here, which means it is a whirlwind of activity--packing, laundry, checking and re-checking To Do lists, trying to figure out how I can get a tan before I park my lily white self on the beach next week....So, what am I doing in the middle of all of this? Making jam....isn't that what any normal person does when under a time crunch? No???

Someone handed me a grocery bag stuffed with fresh plums at church on Sunday and I couldn't let them go to waste. I didn't have quite enough to make a full batch of jam, so I searched online and found this recipe for Raspberry Plum Jam. So last night, I plugged in my mp3, got to peeling plums, and measured and stirred my way to 12 half pints of jam. I enjoyed the fruits of my labor (pun intended) on some toast this morning and it was yummy, if I do say so myself!

Now, what to do with the bag of zucchini that someone handed the Rev at church last night....Anybody have any ideas besides eating it as is or making zucchini bread?

I use a tad of oil, cut zucchini sticks drop in hot pan, sesame seeds and some soy sauce. Love them crunchy.

I recently made zucchini-walnut muffins and the recipe is on my page :) Fried zucchini? Zucchini slaw? Kebabs? Jam sounds good...I should make some next week.

I have a recipe for sausage stuffed zucchini if you are interested. I haven't tried it yet but it looks yummy
