Low Fat Love

Ah, its the Week of Love--hey, if the Rev gets a whole month for his birthday, then I am surely taking a whole week for Valentine's Day! Join me each day this week for Valentine's fun.

Today, a Valentine's treat that you can make for your sweetie (or yourself!) and still stay on track with your weight loss and healthy eating goals. It is easy, tasty and just 145 calories per serving, with 1 gram of fat! Serve this as a Valentine's Day dessert and enjoy guilt-free!


Strawberry Cheesecake Pie-lets

1/2 cup Grape-Nuts cereal, finely crushed into crumbs
2 tablespoons plus 2 teaspoons strawberry 100% fruit preserves
1 3/4 cups fat-free milk
1 package sugar-free, fat-free cheesecake pudding mix

In a small mixing bowl, combine the crumbs and 2 tablespoons of the fruit preserves. With a large spoon, stir to mix well. Divide the mixture into 4 ramekins or small dessert bowls. Press the mixture into the bottom of the dishes. Set aside.

In a medium mixing bowl, combine the milk and pudding mix. Whisk to blend. Pour into the ramekins or bowls, over the crumbs. Dollop 1/2 teaspoon preserves on top of each. Cover with plastic wrap. Refrigerate for at least 1 hour or up to 3 days.


Makes 4 servings.
