Ginger-Soy Chicken

This is an excellent low carb recipe and it is soooo good. It is pretty spicy so adjust the red pepper flakes to suit your taste--a little goes a long way. Enjoy!

Ginger -Soy Chicken

3 tablespoons vegetable oil
1 1/4 lbs. chicken breast, cut in bite sized pieces
Salt and pepper
1 tablespoon ground ginger
4 large garlic cloves, chopped
1/2 teaspoon crushed red pepper flakes
1/4 cup soy sauce
3 tablespoons honey
1 head of iceberg lettuce

Using a large, nonstick frying pan over high heat, heat oil until it begins to smoke.

Season chicken with salt and pepper and stir-fry for one minute to sear meat at the edges.

Add ginger, garlic and red pepper flakes and cook, stirring, for three minutes more.

Add soy sauce and honey, stirring quickly so it makes a sauce and glazes the chicken. Remove from heat.

For serving, spread a platter with the lettuce, top with chicken and serve at once or eat as lettuce wraps, as we like to do.
