Gift from the Kitchen #7

A sweet and spicy nut mix with a hint of chocolate!

Jolly Good Nut Mix

Here's what you'll need:

1/2 cup sugar
2 teaspoons Cajun seasoning
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 egg whites
2 cans (11.5 oz. each) lightly salted mixed nuts (I just use pecans and cashews)
2 cups M&M's

Here's what you do:

Preheat oven to 300 degrees. Line a jellyroll pan with parchment paper.

Combine sugar, Cajun seasoning, salt and pepper.

In a large bowl, whisk egg whites until frothy. Add nuts and stir until coated. Sprinkle with sugar mixture.; toss.

Using slotted spoon, transfer nut mixture to pan. Spread into a single layer.

Bake 30 minutes, stirring occassionally, until toasted.

Cool completely. If necessary, break nut mixture into pieces; toss with candies.
