One of the Rev's favorite dishes (and I obviously don't make it enough, because he is always asking for it) is Chicken Calzones. They really are good and fairly easy to make. I usually double the filling recipe and freeze it for another meal--it also makes a great filling for wraps or a topping for mini pizzas. Serve with a simple salad and dinner is done!Chicken Calzones
Refrigerated pizza crust
1 cup cut up cooked chicken
1 cup chopped mushrooms
3/4 cup shredded mozzarella cheese
1/3 cup pizza sauce
2 tablespoons grated parmesan cheese
Preheat oven to 425 degrees.
Preheat oven to 425 degrees.
Combine chicken, mushrooms, mozzarella cheese, and pizza sauce. Set aside.
Roll out pizza dough and separate into 4 circles of dough. Roll out to desired thickness.
Place about 1/3 cup of filling on each circle; spread to within 1 inch of edge.
Fold dough over filling; press edge with fork to seal or fold edge up and pinch securely to seal.
Place on a greased cookie sheet; brush with egg white and sprinkle with grated parmesan cheese.
Cut several slits in top surface of dough to vent steam.
Bake for 15-17 minutes.
Serve with extra pizza sauce for dipping.
