Chicken Calzones

One of the Rev's favorite dishes (and I obviously don't make it enough, because he is always asking for it) is Chicken Calzones. They really are good and fairly easy to make. I usually double the filling recipe and freeze it for another meal--it also makes a great filling for wraps or a topping for mini pizzas. Serve with a simple salad and dinner is done!

Chicken Calzones

Refrigerated pizza crust

1 cup cut up cooked chicken
1 cup chopped mushrooms
3/4 cup shredded mozzarella cheese
1/3 cup pizza sauce
2 tablespoons grated parmesan cheese
Preheat oven to 425 degrees.

Combine chicken, mushrooms, mozzarella cheese, and pizza sauce. Set aside.

Roll out pizza dough and separate into 4 circles of dough. Roll out to desired thickness.

Place about 1/3 cup of filling on each circle; spread to within 1 inch of edge.

Fold dough over filling; press edge with fork to seal or fold edge up and pinch securely to seal.

Place on a greased cookie sheet; brush with egg white and sprinkle with grated parmesan cheese.

Cut several slits in top surface of dough to vent steam.

Bake for 15-17 minutes.

Serve with extra pizza sauce for dipping.
