So, I helped host a bridal shower this past weekend and got to use a recipe that I had been drooling over for a few weeks now.
Bakerella's Red Velvet Cake Balls were a hit and as the Rev and I were scarfing a few down for breakfast the next morning (yes, folks we had a moment of dieting weakness!), he proclaimed them "sinful" and I have to agree.
Here is the recipe:
Bake a cake of your choosing. I used Red Velvet cake mix as in the original recipe and baked it in a 9x13 pan. After the cake cools, crumble into a large bowl.
Add a 16oz. container of the frosting of your choice. Mix well--mixing with my hands was messy but worked well.
Roll into quarter size balls, place on a cookie sheet and chill for several hours.
Melt coating of your choice (Semi-sweet, milk chocolate, or white chocolate) in the microwave.
Roll balls in coating and lay on wax paper to firm up.
And the best part about them--OK aside from the fact that they taste amazing--is that they are so easy to make. And you can change up the recipe to make your own flavor combinations!

Chocolate cake mix with coconut pecan frosting
Strawberry cake mix with cream cheese frosting
Carrot cake mix with cream cheese frosting
Devil's food cake mix with cream cheese or chocolate frosting
I'm gonna work on a way to get some peanut butter in there for Kiki (you haven't met her yet, but she is married to my brother, BestBuys) and she loves her some peanut butter and chocolate. And, I need to come up with a Funfetti version for the Rev, since he is all about some Funfetti. I'll let you know how that turns out!
A batch makes about 5 dozen so there will be plenty to share...or not!
