DCB Recipe #37: Peach Chipotle Chicken

This a recipe for the crockpot that I adapted for the deep covered baker. We enjoyed it with a side of saffron rice and broccoli. Yum!

Peach Chipotle Chicken

4 chicken breasts
Salt and Pepper
18oz. bottle of Sweet Baby Ray's Honey Chipotle BBQ Sauce
18oz. jar of peach preserves

Season chicken with salt and pepper and place in the deep covered baker. Cover, and microwave for 9 minutes.

Remove from microwave, drain juice from baker.

Cover chicken with preserves and BBQ sauce. Microwave, covered for an additional 2-3 minutes, until sauce is heated through.
