I can take or leave Cadbury Mini Eggs, but they are one of the Rev's favorite Easter candies, next to his Cadbury Creme Eggs, of course. And we love blondies around here, perfect for those times when something sweet doesn't necessarily mean something chocolate. This recipe from Bakeaholic Mama is a perfect marriage of both treats and I definitely changed my view on the mini eggs when eaten this way. Make some, OK?
Cadbury Mini Egg Blondies
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups milk chocolate mini eggs
In a medium size mixing bowl sift flour, baking soda and salt together.
Melt butter over medium heat. Once melted add to the bowl of your electric mixer. Cream together with sugars.
Add in vanilla and eggs mix until creamy.
Slowly add in flour mixture until it is incorporated.
Fold in Mini Eggs.
Spread batter into a greased 8x8 or 9x9 baking dish. Bake at 325 for about 35 minutes or until golden brown.
Let the bars cool for 30 minutes before slicing.

Oh my gosh! Blondies are my favorite!
I've never had blondie's before but they sure look good!! I MUST get on a diet!! These recipes aren't helping my deep desire for SUGAR! yum!
