Honey-Ginger Shrimp

This was a healthy, little meal that was featured in All You (that's a WalMart exclusive, in case you didn't know--check it out for some great coupons!) magazine this month--and it was super quick. We are working on getting more seafood in our diet, so this was an easy recipe to experiment with. The recipe is for a single serving, so you will need to adjust for your family.

Honey -Ginger Shrimp

1 Tbsp. honey
1 Tbsp. grated fresh ginger
2 Tbsp. lime juice
2 tsp. olive oil
3 oz. shrimp

2 cups broccoli slaw
Hot, cooked rice

Make rice according to directions.

Whisk together honey, ginger, lime juice and olive oil.

In a skillet, cook shrimp in honey mixture for 5 minutes. Add in slaw and cook for 3 minutes.

Serve shrimp and slaw with cooked rice.
