Seize the chocolate!

Don't let a stray drop of water, ruin your melted chocolate.

I use a ton of melting chocolate when filling cake ball orders and nothing is worse than leaving just a little water in the bowl and seeing that smooth chocolate go all grainy. To fix the issue, add 1 tablespoon of water for every 2oz. of chocolate in the pot. Small amounts of water make chocolate seize, but a larger dose loosens the chocolate and makes it smooth again!
