Bake Sale Goodies

We had a Bake Sale for work this weekend, so I got to whip up some yummy treats! I opted to make M&M Double Doozies and Simply Great Caramel Corn Mix.
I won't lie, Double Doozies are alot of work, but well worth the effort. The Caramel Corn Mix is made completely in the microwave and couldn't be any easier, so it was a perfect balance to the more complex Doozies.


I'm not posting the Double Doozies recipe, since it is a bit labor intensive. It is not a complicated recipe though, so if you are interested in a copy of it let me know. Here is the how to on the caramel corn mix.

Simply Great Caramel Corn Mix

10 cups popped corn (about 2 large microwave bags)
1 cup mini pretzels
1 cup salted cashews
1 cup almonds
1 cup pecans
1 large brown paper grocery bag
1 stick butter
1 cup packed light brown sugar
1/4 cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda

Place the popped corn, pretzels, and nuts in the paper bag. Shake to combine.

Melt butter in a microwave safe bowl, 1 minute. Stir in brown sugar, corn syrup, and salt. Microwave 2 minutes. Mixture will boil. Carefully stir and microwave for additional 2 minutes.

Stir baking soda into sugar mixture. It will foam up. Carefully pour over popcorn mixture. Fold top of bag over and shake to coat popcorn.

Place bag in microwave and cook 1 1/2 minutes. Remove bag and shake.

Microwave an additional 1 minute. Pour onto large cookie sheets to cool.
