Oatmeal Chocolate Chip Bread
1 1/3 cups all-purpose flour
2/3 cup oats, quick or rolled
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/3 cup chopped walnuts, optional
1/3 cup chocolate chips
1 large egg
3 tablespoons butter, melted
1 cup lowfat buttermilk

In a large bowl whisk together the flour, oats, granulated sugar, brown sugar, baking powder, soda, cinnamon, salt, walnuts, and chocolate chips.
In a small bowl, whisk together the buttermilk, egg and melted butter. Stir the wet mixture into the dry ingredients and stir with a wooden spoon or rubber spatula just until evenly moistened; the batter will be lumpy.
Pour the batter into a greased Deep Covered Baker (or loaf pan) and bake at 350 degrees until a knife or toothpick inserted in the middle comes out clean, about 40-45 minutes.
